Milk chocolate chips, melted

Directions

  1. To make crust, stir together crushed cookies and melted butter in a small bowl, until well-combined.
  2. Press crumb mixture evenly into bottom of a 9-inch springform pan.
  3. In a large bowl, combine cream cheese, brown sugar and cornstarch.
  4. Beat with mixer until smooth.
  5. Add eggs and egg yolk one at a time, beating well after each addition.
  6. Stir in sour cream and vanilla.
  7. Stir together instant coffee and hot water; set aside.
  8. Place 3/4 cup cream cheese mixture in a small bowl.
  9. Add dissolve coffee.
  10. Stir in sugar.
  11. Stir chocolate chips and corn syrup into remaining cheese mixture.
  12. Pour 1/2 of chocolate mixture over crust.
  13. Spoon 1/2 of coffee mixture over chocolate mixture.
  14. Pour remaining chocolate mixture over coffee mixture.
  15. Spoon on remaining coffee mixture.
  16. Swirl a knife handle through filling to create a marbling effect.
  17. Bake at 350 for 15 minutes.
  18. Lower temperature to 225 and bake 1 hour and 10 minutes longer or until center no longer looks wet.
  19. Remove cake from the oven and run a knife around inside edge of the pan.
  20. Turn oven off.
  21. Return cake to oven for 30 minutes.
  22. Chill uncovered, onvernight.
